Pac Macs (a.k.a. Paccheri)

Pac Macs are our version of paccheri, probably the most traditional pasta cut in Naples after spaghetti…
The Italian wikipedia says that they derive their name from the Greek ”πας” (all) e “χειρ” (hand)…meaning some sort of slap, given with a full hand. Now, our pipes are not that mean but they pack a punch for sure. Texturally they are great, thick and toothsome and they take center stage in every dish…
